Cultural background

Unlike ordinary hanjeongsik, which originated from royal court cuisine, Namdo Hanjeongsik is made up of regional dishes prepared with specialty products unique to Jeolla-do, so the seasoning is somewhat strong and the flavors are richly savory. It is characterized by a table laden with dishes such as bori-gulbi (dried croaker aged in barley), ganjang-gejang (raw crab marinated in soy sauce), hongeo samhap (fermented skate served with pork and kimchi), and various kinds of jeotgal (salted fermented seafood).
